I really like Markdown and the Blue Cloth implementation of it. However, I'd also like to see things like double and single quotes and dashes converted into their nicer Unicode equivalents.

Good idea -- I've been wanting something similar myself. Since Markdown itself doesn't support this I'll probably make it an option like safe mode.
